I have come to the conclusion that beef heart and beef tongue taste exactly the same. That's a good thing, since heart is cheap and tongue is expensive.

Also, I might have to try a potato stuffing the next time I have to braise something for 3 hours. Bread stuffing doesn't hold up the best (but is still tasty).
